Spinach Artichoke Casserole


5 egg whites

2 whole eggs

2 cups cottage cheese

2 cups cooked chopped spinach (frozen is ok to use)

1 cup chopped artichoke hearts

1 cup finely chopped onion

1 tsp salt

1 tsp black pepper


How to Make:

-Beat eggs and egg whites in a large mixing bowl.

-Stir in remaining ingredients until well blended.

-Transfer to a buttered 9×13 baking dish.

-Bake at 350 degrees until set, approximately 40 minutes.

-Sprinkle with parmesan cheese.
