Chicken with a Sage, Lemon and Butter Sauce


Chicken Breast

12 Sage Leaves

Olive Oil







I used to make this with prosiutto wrapped around the chicken…was much better but gave up the nitrates.

In one pan, saute some spinach (fresh or frozen).

In a little olive oil, saute the chicken until crispy in another pan.  Put in a dish in the oven set to 300 degrees.

In the saute pan from the chicken, add a bit more olive oil and saute the sage leaves for 1 minute. 

Turn the temperature down to low.  Add in some capers and a pat of butter.  Zest the lemon into the pan and then add the juice of the lemon.  Swirl the ingredients together.

Take the chicken out of the oven and pour the juices into the sauce pan.

Plate the spinach.  Place a chicken breast on top of the spinach.  Pour the sauce on top.  Serve!
